Place the mushrooms in 2 cups of hot water to soak 15 minutes.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Saut\u00e9 the carrot, onion and celery slowly in a little olive oil until the onions become translucent. Remove from heat.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Carefully lift the mushrooms from the soaking liquid with a slotted spoon, reserving the liquid. Allow them to drain over the bowl for a few seconds and then transfer to a sieve. Rinse the mushrooms in running water for a few seconds to wash away any grit.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Saut\u00e9 the mushrooms in a little olive oil on medium heat for about three minutes, stirring.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Pour the soaking liquid into the pan through a fine-mesh strainer, leaving the last teaspoonful in the bowl with any remaining grit.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Add the wine, raise the heat and cook rapidly, stirring occasionally, to reduce the liquid to a thick, syrup-like glaze which will coat and cling to the mushrooms.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Combine the cold meat, carrot mixture, garlic, mushrooms, nutmeg, egg, panko, herbs, salt and hot sauce in a roomy bowl.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Mix quickly but thoroughly (I think this is best done with a pair of clean hands) and press into a loaf pan. Decorate if preferred with some artful carrot slivers, tarragon leaves, etc.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Bake in a 350\u00ba oven until the internal temperature reaches 150\u00ba. Remove from oven, wrap in foil and allow to rest 20 minutes.\n          <\/li>\n              <\/ol>\n\n<div class=\"zlmeta zlclear asl_meta\">\n  <div class=\"fl-l\">\n    <script type=\"text\/javascript\" > window.ajaxurl = \"https:\/\/asweetlife.org\/wp-admin\/admin-ajax.php\";<\/script>\n    \n\n        \n    \n    \n      <\/div>\n\n  <div class=\"fl-l\">\n    \n    \n    \n      <\/div>\n  <div class=\"zlclear\">\n  <\/div>\n<\/div>\n\n                      <p id=\"zlrecipe-notes\" class=\"h-4 strong\">Notes<\/p>\n            <div id=\"zlrecipe-notes-list\">\n       <p class=\"notes\">* I\u2019ve been reading Michael Ruhlman\u2019s <a href=\" http:\/\/www.amazon.com\/Charcuterie-Craft-Salting-Smoking-Curing\/dp\/0393058298\/ref=sr_1_1\/102-6126225-5470502?ie=UTF8&s=books&qid=1177275508&sr=8-1\" target=\"_blank\">Charcuterie <\/a> lately and he instructs that blending the meat at near-freezing temperature binds the fats in such a way that they don\u2019t break down so readily under heat, which is apparently a good thing, so I\u2019ve added this step to my meatloaf routine.
