{"id":21762,"date":"2011-11-14T07:13:16","date_gmt":"2011-11-14T12:13:16","guid":{"rendered":"http:\/\/asweetlife.org\/?p=21762"},"modified":"2016-02-08T05:38:38","modified_gmt":"2016-02-08T10:38:38","slug":"chipotle-seared-tilapia-with-homemade-pico-de-gallo","status":"publish","type":"post","link":"https:\/\/asweetlife.org\/?p=21762","title":{"rendered":"Chipotle Seared Tilapia with Homemade Pico De Gallo"},"content":{"rendered":"<p style=\"text-align: justify;\"><em>Happy World Diabetes Day!\u00a0 We&#8217;re so excited to share Carolyn Ketchum&#8217;s\u00a0 tilapia recipe with you today. \u00a0 <\/em><\/p>\n<p style=\"text-align: justify;\"><em>Carolyn is the author of the outstanding food blog, <a href=\"http:\/\/dreamaboutfood.blogspot.com\/\" target=\"_blank\">All Day I Dream About Food<\/a>, where she focuses on recipes for low-carb meals and treats.\u00a0 Carolyn has always <a href=\"https:\/\/asweetlife.org\/a-sweet-life-staff\/featured\/the-rebirth-of-a-baker\/14989\/\" target=\"_blank\">loved to bake<\/a>, but after she was diagnosed with gestational diabetes while pregnant with her third child, she began to concentrate on low-carb recipes.\u00a0 <\/em><\/p>\n<p style=\"text-align: justify;\"><em>Her diagnosis came as a surprise since Carolyn was fit and healthy, and everyone expected that diabetes would go away after she gave birth.\u00a0 It did, seemingly, for a few months.\u00a0 But then, because she was still testing blood sugar every so often, Carolyn noticed a disturbing upwards trend on her meter.\u00a0 She started monitoring more closely and consulted with her doctor.\u00a0<\/em><\/p>\n<p style=\"text-align: justify;\"><em>For the time being, Carolyn&#8217;s official diagnosis is pre-diabetes, but she suspects that this is only because she is so careful about what she eats and how much exercise she does.\u00a0 &#8220;If I was to go back to eating more carbs,&#8221; she says,\u00a0 &#8220;I am sure I would fall into the diabetic category. \u00a0 As far as I am concerned, it is diabetes, because I treat it the same way I would if I was a full-blown diabetic (i.e. testing, low carb and exercise).&#8221;<\/em><\/p>\n<p style=\"text-align: justify;\"><em>In addition to having one of the best food blogs out there, Carolyn is also a cookbook author.\u00a0 You can find her recipes in the new book. <a href=\"http:\/\/amongfriends.us\/\" target=\"_blank\">Low-Carbing Among Friends<\/a>.<\/em><\/p>\n<p style=\"text-align: justify;\"><em>We&#8217;ve been lucky to have Carolyn on board as one of ASweetLife&#8217;s culinary contributors.\u00a0 And the recipe below, which she shared for Diabetes Awareness Month, is about as good as it gets.\u00a0 Take it away, Carolyn! &#8211; return false\" rel=\"nofollow\">\n              Print            <\/a>\n                  <\/div>\n      \n      <div class=\"zlrecipe-yummly-button fl-r\">\n        <a href=\"\/\/yummly.com\" class=\"YUMMLY-YUM-BUTTON\">Yum<\/a>\n        <script src=\"https:\/\/www.yummly.com\/js\/widget.js?wordpress\"><\/script>\n      <\/div>\n\n            <div id=\"zlrecipe-title\" itemprop=\"name\" class=\"b-b h-1 strong \" >Chipotle Seared Tilapia with Homemade Pico De Gallo<\/div>\n    <\/div>\n\n        \n                      <p id=\"zlrecipe-ingredients\" class=\"h-4 strong\">\n        Ingredients      <\/p>\n    \n                \n                \n    <ul id=\"zlrecipe-ingredients-list\">\n                                            <div class=\"ingredient no-bullet-label\">\n            Pico De Gallo:\r\n          <\/div>\n                                <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            2 cups tomatoes, chopped and seeded\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1\/4 cup onion, minced\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1 medium jalapeno, chopped (I like to leave in some of the seeds for extra heat)\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            2 cloves garlic, minced\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            juice of 1 lime\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1\/2 cup fresh cilantro, chopped\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            Salt and pepper to taste \r\n          <\/li>\n                                                <div class=\"ingredient no-bullet-label\">\n            Tilapia:\r\n          <\/div>\n                                <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            4 tilapia fillets (about 6 oz each)\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            2 tsp chipotle powder\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            Salt and pepper to taste\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            2 tbsp butter\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1\/2 cup shredded Cheddar cheese, Monterey Jack or a combination\n          <\/li>\n              <\/ul>\n\n                      <p id=\"zlrecipe-instructions\" class=\"h-4 strong\">Instructions<\/p>\n    \n                \n                \n    <ol id=\"zlrecipe-instructions-list\" class=\"instructions\">\n                        <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          For the pico de gallo, add all ingredients in a medium bowl and mix well.  Let sit for at least an hour to allow the flavors to meld together.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Pat tilapia fillets dry with a paper towel.  Sprinkle both sides with chipotle powder, salt and pepper.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Melt butter in a large skillet over medium high heat.  Swirl melted butter to coat the bottom of the pan. \r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Add tilapia and cook about 1 1\/2 to 2 minutes per side, or until fish is golden brown and flakes easily with a fork.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Remove tilapia from pan and sprinkle with shredded cheese.
