The mushrooms are saut\u00e9ed with some onions, garlic and fresh thyme and then simmered with diced tomatoes.<\/p>\n<p style=\"text-align: justify;\">I ate this ragout with some brown rice, but it would work well with quinoa. It can be made up to two days ahead. Cannellini Bean Ragout<\/div>\n    <\/div>\n\n        \n                      <p id=\"zlrecipe-ingredients\" class=\"h-4 strong\">\n        Ingredients      <\/p>\n    \n                \n                \n    <ul id=\"zlrecipe-ingredients-list\">\n                        <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            3 tbsp olive oil\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            2 medium onions, chopped\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            16 oz. crimini mushrooms, thinly sliced\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            4 cloves garlic, minced\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            4 tsp chopped fresh thyme leaves\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1\/2 tsp kosher salt\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1\/2 tsp freshly ground black pepper\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1 (28 oz.) can diced tomatoes, juices included\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1 (14 oz.) can cannellini beans, drained and rinsed\n          <\/li>\n              <\/ul>\n\n                      <p id=\"zlrecipe-instructions\" class=\"h-4 strong\">Instructions<\/p>\n    \n                \n                \n    <ol id=\"zlrecipe-instructions-list\" class=\"instructions\">\n                        <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Heat the olive oil in a large frying pan set over medium heat.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Add onions and cook, stirring occasionally, until soft, about 5 minutes.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Add mushrooms, garlic, thyme, salt and pepper and cook, stirring frequently, until mushrooms are very tender, about 10 minutes.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Add tomatoes and juices and cook until the mixture starts to thicken, about 10 minutes.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Stir in beans and cook until beans are warmed through, about 10 minutes.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Serve over brown rice or polenta. \r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          <span class=\"bold\">Prepare Ahead:<\/span> The ragout can be made up to 2 days in advance.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Store, covered, in the refrigerator.
