All that awful frying, all that heavy starch \u2013 ugh!<\/p>\n<p style=\"text-align: justify;\" align=\"left\">So my challenge for this year was to come up with a tasty substitute for the traditional potato pancake that inspires in me nothing but heartburn and indigestion. Using cauliflower as the creamy base, these oven baked latkes I conjured up are my personal Hanukkah miracle.\u00a0 Instead of heavy potato latkes, I made latkes without the carbs, without the frying and without the heartburn. return false\" rel=\"nofollow\">\n              Print            <\/a>\n                  <\/div>\n      \n      <div class=\"zlrecipe-yummly-button fl-r\">\n        <a href=\"\/\/yummly.com\" class=\"YUMMLY-YUM-BUTTON\">Yum<\/a>\n        <script src=\"https:\/\/www.yummly.com\/js\/widget.js?wordpress\"><\/script>\n      <\/div>\n\n            <div id=\"zlrecipe-title\" itemprop=\"name\" class=\"b-b h-1 strong \" >Low-Carb Cauliflower, Leek and Zucchini Latkes<\/div>\n    <\/div>\n\n        \n                      <p id=\"zlrecipe-ingredients\" class=\"h-4 strong\">\n        Ingredients      <\/p>\n    \n                \n                \n    <ul id=\"zlrecipe-ingredients-list\">\n                        <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            \u00bd head of a small cauliflower (about two cups)\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            2 tablespoons olive oil\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1 small leek\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1 small zucchini\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            2 eggs\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            2 tablespoons whole wheat self-raising flour\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1 tablespoon finely chopped fresh dill\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1 tablespoon finely chopped fresh parsley\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            \u00bd teaspoon salt\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            Freshly ground black pepper\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1-2 tablespoons Canola oil\n          <\/li>\n              <\/ul>\n\n                      <p id=\"zlrecipe-instructions\" class=\"h-4 strong\">Instructions<\/p>\n    \n                \n                \n    <ol id=\"zlrecipe-instructions-list\" class=\"instructions\">\n                        <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Pre-heat the oven to 350\u00b0F (180\u00b0C)\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Wash the cauliflower, cut into small florets and steam until the cauliflower has just softened (about 10 minutes). When the cauliflower is ready, place the pieces on a cutting board and chop (I smack it with the back of a chef\u2019s knife \u2013 as you would garlic \u2013 and then do a rough chop). You don\u2019t want any large chunks but it doesn\u2019t have to be pureed.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Cut the white part of the leek lengthways and then cut each half lengthways again so you have the four quarters of the leek, and finely chop the leek (each slice should be about 2-3 mm. Add to a pan in which you\u2019ve heated the olive oil and start saut\u00e9ing.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Grate the zucchini on a coarse grater and add to the leek, stirring until both the leek and the zucchini have softened (about 5 minutes).\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          In a bowl, beat the eggs and add the herbs and seasoning. Add the vegetables (make sure they have cooled slightly so they don\u2019t cook the eggs) and mix.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Add the whole wheat flour and mix together.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Place a piece of baking paper on a baking tray and spread the oil on the paper evenly. Drop about one tablespoon of the mixture on the paper and flatten it a bit with the spoon or a spatula.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Bake for 15 minutes.
