market almost every weekend and brings us cartons of beautiful grape tomatoes in beautiful colors \u2013 red, yellow, and even a dark, striped variety.\u00a0 We use them to make tomato sauce, since Mike and I don\u2019t care for raw tomatoes in our salads.<\/p>\n<p style=\"text-align: justify;\">We have made roasted tomato soup on many occasions and without a doubt, the roasting process intensifies the flavor of the tomatoes.\u00a0 They even become a bit sweet.\u00a0 For a dinner with my mother-in-law in mind, we set about trying to create a salad that incorporated tomatoes, but not raw ones, so it would suit everyone\u2019s tastes.<\/p>\n<p style=\"text-align: justify;\">We roasted tomatoes and onions, and the kitchen was filled with the most appetizing smell.\u00a0 Both Mike and I started to feel hungry, just from being in the room.\u00a0 When this salad came together, we knew we had a winner \u2013 rich, warm flavors with filling and satisfying quinoa, packaged together with refreshing lettuce leaves.<\/p>\n<p style=\"text-align: justify;\">\n<div id=\"zlrecipe-container-185\" class=\"zlrecipe-container-border\" >\n<div id=\"zlrecipe-container\" class=\"serif zlrecipe\">\n  <div class=\"recipeRating\"><div id=\"post-ratings-30230\" class=\"post-ratings\" data-nonce=\"32339c02b1\"><img decoding=\"async\" id=\"rating_30230_1\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" data-src=\"https:\/\/asweetlife.org\/wp-content\/plugins\/wp-postratings\/images\/asweetlife_stars\/rating_on.gif\" alt=\"\" title=\"\" onmouseover=\"current_rating(30230, 1, '');\" onmouseout=\"ratings_off(5, 0, 0);\" onclick=\"rate_post();\" onkeypress=\"rate_post();\" style=\"cursor: pointer; return false\" rel=\"nofollow\">\n              Print            <\/a>\n                  <\/div>\n      \n      <div class=\"zlrecipe-yummly-button fl-r\">\n        <a href=\"\/\/yummly.com\" class=\"YUMMLY-YUM-BUTTON\">Yum<\/a>\n        <script src=\"https:\/\/www.yummly.com\/js\/widget.js?wordpress\"><\/script>\n      <\/div>\n\n            <div id=\"zlrecipe-title\" itemprop=\"name\" class=\"b-b h-1 strong \" >Roasted Grape Tomato and Quinoa Salad<\/div>\n    <\/div>\n\n        \n                      <p id=\"zlrecipe-ingredients\" class=\"h-4 strong\">\n        Ingredients      <\/p>\n    \n                \n                \n    <ul id=\"zlrecipe-ingredients-list\">\n                        <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            20 grape tomatoes halved\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1\/2 small onion, thinly sliced lengthwise\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1 cup cooked quinoa\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1\/2 cup extra virgin olive oil\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            2 1\/2 tablespoons white wine vinegar\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            salt \r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            pepper\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            Assortment of lettuce leaves \u2013 enough to serve four\n          <\/li>\n              <\/ul>\n\n                      <p id=\"zlrecipe-instructions\" class=\"h-4 strong\">Instructions<\/p>\n    \n                \n                \n    <ol id=\"zlrecipe-instructions-list\" class=\"instructions\">\n                        <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Preheat oven to 375.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Place halved tomatoes and onion slices into a bowl with 1 tablespoon of olive oil and toss until ingredients are evenly coated.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Place ingredients in an ovenproof baking dish and roast until tomatoes are lightly browned and onions are caramelized (about 30 minutes).\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          While the tomatoes are roasting, fill a large bowl with lettuce.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Remove roasted tomatoes and onions from oven and mix with 1 cup cooked quinoa.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Combine the rest of the olive oil with the vinegar, salt and pepper in a salad dressing shaker or a small jar with a tight fitting top.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Shake well and pour 1\/2 of the dressing over tomatoes, onions, and quinoa, and gently mix.
