Ironic, I know, but let\u2019s go with it because it tastes great.<\/p>\n<p style=\"text-align: justify;\">I think it goes without saying that potatoes latkes are not something I indulge in on Hanukkah.\u00a0 But since I enjoy a good latke, and the process of coming up with a low carb latke is a fun one, I decided to experiment with the Greek flavors I came to love while working in Athens.\u00a0 I believe these spinach and feta latkes are my all-time favorite low carb latkes.\u00a0 In fact, I\u2019d eat these spinach and feta latkes any time of year, not just on Hanukkah.<\/p>\n<p style=\"text-align: justify;\">I used one cup of feta, however, you may want to use less if you choose a particularly strong or salty feta.\u00a0 If you prefer a strong garlic flavor, you can add a second clove of garlic.<\/p>\n<p style=\"text-align: justify;\">\n<div id=\"zlrecipe-container-205\" class=\"zlrecipe-container-border\" >\n<div id=\"zlrecipe-container\" class=\"serif zlrecipe\">\n  <div class=\"recipeRating\"><div id=\"post-ratings-31400\" class=\"post-ratings\" data-nonce=\"89e1fe662f\"><img decoding=\"async\" id=\"rating_31400_1\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" data-src=\"https:\/\/asweetlife.org\/wp-content\/plugins\/wp-postratings\/images\/asweetlife_stars\/rating_on.gif\" alt=\"\" title=\"\" onmouseover=\"current_rating(31400, 1, '');\" onmouseout=\"ratings_off(4, 0, 0);\" onclick=\"rate_post();\" onkeypress=\"rate_post();\" style=\"cursor: pointer; Add the spinach to the mixture.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Heat the oil in a nonstick frying pan. Using a tablespoon add spoonfuls of the mixture to the pan, flattening each one out.
