Fried cauliflower (it&#8217;s just like popcorn!), and now there&#8217;s a new cauliflower favorite on my block, thanks to<a href=\"http:\/\/comfybelly.com\" target=\"_blank\"> Erica Kerwien of Comfy Belly<\/a>: mashed cauliflower.<\/em>\u00a0 &#8211; Jessica Apple<\/span><\/p>\n<h2 style=\"text-align: justify;\"><\/h2>\n<p style=\"text-align: justify;\"><span style=\"text-align: center;\">It\u2019s a hard decision \u2013 eat\u00a0<\/span><a style=\"text-align: center;\" href=\"http:\/\/comfybelly.com\/2011\/01\/roasted-cauliflower-trees\/\" target=\"_blank\">roasted cauliflower trees<\/a><span style=\"text-align: center;\">, or eat mashed cauliflower. Mashed cauliflower is easier on the belly (if that\u2019s an issue), and it\u2019s one way to have a plate of garlicky, creamy food that isn&#8217;t all carb.<\/span><\/p>\n<p style=\"text-align: justify;\">I added thyme to the cauliflower before roasting, but you can keep it simple by using just the garlic and olive oil. I like a bit of Parmesan cheese with my mashed cauliflower, so I sprinkle some of that in at the end, in the blending phase.<\/p>\n<p style=\"text-align: justify;\">I probably don\u2019t need to suggest ways to eat this, but in case you\u2019re looking for ideas, this goes great in a shepherd\u2019s pie, with roasted meats (if you eat meat of course), and other green roasted or lightly sauteed vegetables, like spinach and kale.<\/p>\n<p style=\"text-align: justify;\">\n<div id=\"zlrecipe-container-209\" class=\"zlrecipe-container-border\" >\n<div id=\"zlrecipe-container\" class=\"serif zlrecipe\">\n  <div class=\"recipeRating\"><div id=\"post-ratings-31605\" class=\"post-ratings\" data-nonce=\"aa9edfa092\"><img decoding=\"async\" id=\"rating_31605_1\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" data-src=\"https:\/\/asweetlife.org\/wp-content\/plugins\/wp-postratings\/images\/asweetlife_stars\/rating_on.gif\" alt=\"\" title=\"\" onmouseover=\"current_rating(31605, 1, '');\" onmouseout=\"ratings_off(4.3, 5, 0);\" onclick=\"rate_post();\" onkeypress=\"rate_post();\" style=\"cursor: pointer; return false\" rel=\"nofollow\">\n              Print            <\/a>\n                  <\/div>\n      \n      <div class=\"zlrecipe-yummly-button fl-r\">\n        <a href=\"\/\/yummly.com\" class=\"YUMMLY-YUM-BUTTON\">Yum<\/a>\n        <script src=\"https:\/\/www.yummly.com\/js\/widget.js?wordpress\"><\/script>\n      <\/div>\n\n            <div id=\"zlrecipe-title\" itemprop=\"name\" class=\"b-b h-1 strong \" >Mashed Cauliflower<\/div>\n    <\/div>\n\n        \n                      <p id=\"zlrecipe-ingredients\" class=\"h-4 strong\">\n        Ingredients      <\/p>\n    \n                \n                \n    <ul id=\"zlrecipe-ingredients-list\">\n                        <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1 medium cauliflower\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1 large clove of garlic, pressed or finely minced\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1\/4 teaspoon of sea salt\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            2 tablespoons of olive oil (or other oil)\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            1\/4 teaspoon of thyme (optional)\r\n          <\/li>\n                            <li class=\"ingredient no-bullet\" itemprop=\"recipeIngredient\">\n            warm water or milk (dairy free milk works well also)\n          <\/li>\n              <\/ul>\n\n                      <p id=\"zlrecipe-instructions\" class=\"h-4 strong\">Instructions<\/p>\n    \n                \n                \n    <ol id=\"zlrecipe-instructions-list\" class=\"instructions\">\n                        <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Preheat an oven to 400 degrees F.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Slice the cauliflower into pieces and add it all to a mixing bowl.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Add olive oil, salt, and garlic to the bowl, and blend well to fully coat the cauliflower.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Place the cauliflower on a cookie sheet, and in the oven, and bake for about 20 minutes, or until they are browning around the edges.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Take the cauliflower out of the oven, and place in a blender.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Add about 1 to 2 cups of very warm water (or milk) to the blender.
