I\u2019ve often heard from fellow vegetable gardeners that they are over-run by zucchini come mid-summer and I used to wonder what they were talking about. For several years, I tried to grow zucchini without much success. I now realize that in our zeal for the long green summer squash, we over-crowded our plants. This year, we cut back to 3 well-spaced plants and I finally understand the end-of-summer zucchini glut. So I am now on the lookout for healthful, low carb zucchini recipes.
