These low carb pumpkin whoopie pies are made with soft pumpkin spice cookies and a whipped cream filling. Stir in eggs, butter, pumpkin puree, and vanilla extract until well combined.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Using wet hands, roll dough into 1 inch balls and place on prepared baking sheet. You should get about 24 cookies. Use the palm of your hand to flatten to about 1\/2 inch thick.\r\n          <\/li>\n                            <li class=\"instruction \" itemprop=\"recipeInstructions\">\n          Bake about 20 minutes, or until mostly set but just a little soft in the center.
