A creamy scoop of <em>straciatella\u00a0<\/em>after a long hot day exploring the ruins of Pompei?<\/p>\n<p>Your correspondent just passed through this gauntlet of temptation on a vacation to the <em>Bel Paese<\/em>, and learned that low carb eating in the ancient homeland of pasta is easier \u2013 and more delicious \u2013 than you might expect.<\/p>\n<p>&nbsp;<\/p>\n<h4>Jewish Artichoke<\/h4>\n<p><img decoding=\"async\" class=\"aligncenter wp-image-50868 lazyload\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" data-src=\"https:\/\/asweetlife.org\/wp-content\/uploads\/2019\/09\/iStock_Jewish-Artichoke-1024x683.jpg\" alt=\"fried jewish artichoke\" width=\"600\" height=\"400\" \/><\/p>\n<p><em>Carciofi alla giudia\u00a0<\/em>is a specialty of the old Jewish ghetto in Rome. The groceries and markets of Italy are festooned with salted haunches hanging from the rafters, just waiting for hungry picnickers to step up to the counter.<\/p>\n<p><a href=\"https:\/\/www.instagram.com\/p\/B1A9nP6nfXc\/\">https:\/\/www.instagram.com\/p\/B1A9nP6nfXc\/<\/a><\/p>\n<p>&nbsp;<\/p>\n<h4>All Those Other Cured Meats<\/h4>\n<p>Italy has so much cured pork it\u2019ll make your head spin. I found myself muttering incoherently at the country\u2019s voluminous salumi counters, staggered at the beauty and variety spread out in front of me. What should I ask for? How could I even begin to choose?<\/p>\n<p><a href=\"https:\/\/www.instagram.com\/p\/B1jcqUZoP8i\/\">https:\/\/www.instagram.com\/p\/B1jcqUZoP8i\/<\/a><\/p>\n<p>&nbsp;<\/p>\n<h4>Seafood Heaven<\/h4>\n<p>Italy is a heaven for fresh seafood, from Liguria down to Sicily and back up past Venice. Most of the nation is within a short drive of the coast, and wherever you go you can find the fresh fish and shellfish, simply prepared.\u00a0<\/p>\n<p><a href=\"https:\/\/www.instagram.com\/p\/ByapL6Go_PT\/\">https:\/\/www.instagram.com\/p\/ByapL6Go_PT\/<\/a><\/p>\n<p>&nbsp;<\/p>\n<h4>Burrata<\/h4>\n<p><img decoding=\"async\" class=\"aligncenter size-large wp-image-50865 lazyload\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" data-src=\"https:\/\/asweetlife.org\/wp-content\/uploads\/2019\/09\/iStock_Burrata-1024x683.jpg\" alt=\"Salad with buratta cheese\" width=\"1024\" height=\"683\" \/><\/p>\n<p>Are you familiar with burrata, mozzarella\u2019s sexier cousin? The finer markets will tell you exactly how many <em>days<\/em>old each dollop of heaven is, and restaurants will serve burrata as an appetizer, seasoned only with olive oil, salt and pepper.
