Low Carb Coconut Lime Popsicles

Summer requires popsicles and plenty of them! These easy Coconut Lime Popsicles take about 3 seconds to whip up, although you do have to wait for them to freeze. They are also completely dairy-free. A sweet low carb way to cool off this summer.

A few notes: Coconut cream is the thick creamy stuff at the top of a can of coconut milk. You can use regular coconut milk and scoop it out, avoiding the thinner water at the bottom. This recipe will need two cans of coconut milk to get enough coconut cream. 

Let’s Do Organic also sells cans of just the coconut cream, with very little extra liquid. You will only need one can of that for this recipe. 

Be sure to use powdered or liquid sweetener ONLY in this recipe, to avoid grittiness.

Low Carb Coconut Lime Popsicles

Ingredients

  • 1 ½ cups coconut cream
  • Powdered sweetener equivalent to ⅓ cup sugar
  • ⅓ cup lime juice
  • 2 tbsp lime zest

Instructions

  1. Place all the ingredients in a blender and blend until smooth. Taste and adjust the sweetener to your liking.
  2. Pour into popsicles molds and press wooden sticks about ⅔ of the way into the popsicles. Freeze 6 to 8 hours.
  3. To unmold, run hot water over the outside of the popsicle mold and gently tug the stick to remove the popsicle.
