On its own, rhubarb is a sour vegetable (often classified as a fruit). You’ll usually find rhubarb sweetened, as it’s difficult to eat on its own.  Most often rhubarb is used in baked goods like pies, or as a jam, but it can also work well in savory dishes, like this Persian lamb and rhubarb stew where it provides a blast of tanginess akin to lime, and a distinct fruitiness that can be sorely missed on a low-carb diet.
