Chicken Milanese with Almond Flour

Low Carb Gluten Free Chicken Milanese with Almond Flour

There are only two days until the Milano City Marathon! Given my upcoming trip, it seemed appropriate to make Chicken Milanese. I worried a bit that the almond flour wouldn’t crisp up the way traditional breadcrumbs do. I’ll admit, I was right. These do lack some crunch, but other than that, they are fantastic.

Is Diabetes a Disability?

That blank line on a simple form shouldn’t have meant anything. It should have come and gone like every other form I’ve ever completed. Instead, it filled my mind with identity questions. I think of myself as diabetic, or a person with diabetes, if you prefer, not as disabled. But yet, if my insulin pump were to fall off during a marathon, or if my blood sugar began to plummet, I’d probably be the most disabled guy on the course.

Swiss Chard and Tahini Salad

Swiss Chard and Tahini Salad

Swiss chard is one of our favorite greens – we eat it steamed, in omelets, in meatballs, and I’m constantly trying new ways to prepare it. This Swiss chard and tahini salad may be my new favorite. It is definitely Jess’s. After tasting it she said, “Can you please make this every day?”

Cucumber Yogurt Salad

Cucumber Yogurt Salad

We’ve been lucky with the weather this week and the warm days inspired me to create a recipe for cucumber yogurt salad. This salad has a Middle Eastern flair to it that you can’t miss. You could easily find it served at a meal with hummus, tahini, and tabouleh. But I like to make a large bowl of it and eat it for breakfast after a long run. It's filling, easy to make and tastes great.

Cottage Cheese Pancakes

Cottage Cheese Pancakes, Low Carb and Gluten Free

The original recipe calls for flour, but I swapped it for almond flour and made a few adjustments to make it low carb and gluten-free. The result is delicious. And every few days I hear Jess politely suggesting I make cottage cheese pancakes.

Meatballs in Lemon Sauce

Swiss Chard Meatballs in Lemon Sauce

My kids were a little skeptical when I told them I was making meatballs in a lemon sauce. “Not tomato sauce?” one of my sons asked. Luckily, my sons were willing to try something new. And they loved meatballs in lemon sauce.

Brussels Sprouts in Cream and Parmesan

Brussels Sprouts in Cream and Parmesan

I wasn’t one of those kids who hated Brussels sprouts. I loved them so much I would beg my grandmother to make them for me. And now, decades later, my sons beg me to make Brussels sprouts for them. I guess loving Brussels sprouts is genetic!

Spinach and Feta Latkes

Spinach and Feta Latkes (My Big Fat Greek Hanukkah)

Although Hanukkah celebrates the Jewish victory over the Greeks, this spinach and feta latkes recipe is inspired by traditional Greek flavors. Ironic, I know, but let’s go with it because it tastes great. I think it goes without saying that potatoes latkes are not something I indulge in on Hanukkah.
