I’ve been in love with Thai peanut sauce ever since my first taste. It usually contains added sugar, but I’ve found the flavor to be just as good without it. Instead of using it as a sauce to pour over the chicken, I use it as a marinade. It was just as delicious as I’d hoped.

Chicken Pot Pie is perhaps one of the most comforting meals and perfect for a cold winter’s day. But the conventional kind is hardly perfect for people on a low carb diet. This low carb chicken pot pie recipe has only a little arrowroot starch in place of the flour, to help thicken the sauce. The low carb, gluten-free biscuit topping is delicious with the creamy chicken filling.
This low carb white chicken chili is the perfect comfort food any time of the year. Low carb corn bread would go perfectly with this dish. You can easily adjust the seasonings to make this chili as spicy as you'd like!
Thai Basil Chicken is a dish I discovered one summer when I had copious amounts of basil growing in my garden. Although there is an actual basil variety called Thai Basil, I usually use the standard kind and it tastes delicious. Normally I do not use iceberg lettuce for any recipe because it’s virtually devoid of nutritional value, but it’s definitely makes for the best lettuce wraps.
Meatballs are always a huge hit in my house, but most recipes contain unnecessary gluten and carbs. Replacing the bread crumbs with some almond and coconut flour helps bind these chicken meatballs and make them far healthier.
These garlic parmesan wings are truly delicious, and the traces of herbs left in the bowl after tossing the wings was so good, I kept sticking my fingers in and licking it up (don’t worry, the chicken was cooked at this point!). Not having to chop the garlic or the basil was a huge plus for me, and I also used the Gourmet Garden oregano instead of dried oregano.
Super Bowl Sunday just wouldn’t be the same without Buffalo Chicken Wings. This is my favorite way to prepare them because it requires no frying and they taste delicious. I like to broil the wings for just a minute after coating them with the sauce.
Soup season is upon us and this rich spicy chicken chowder will warm you all the way down to your toes. The jicama provides an interesting substitution for potatoes, but they do stay a little crunchier. Alternatively, you could use diced daikon radish, which softens more during cooking. And if you're looking for a way to use up your leftover turkey...
This Mole Sauce recipe is one of the heavy rotation mainstays in our kitchen. It can be made vegetarian-style with only minor adjustments. It is easily scaleable (I’ve cooked it for 27 people at a family reunion), freezable and reheatable, and it can be made from start to finish in about half an hour.
Like Carolyn Ketchum, we love crispy chicken wings, so we’re very grateful she is sharing this recipe for Thai curry crispy chicken wings…
