Dr Judi Rebekah Walters is a research scientist and editor whose PhD involved measuring the use of carbohydrates reserves during re-sprouting of Eucalyptus seedlings. This detailed knowledge about the chemistry of carbohydrates was particularly useful when she started investigating the role of macronutrients in blood glucose management for people with diabetes. She lives in Australia with her husband and two children, and has recently published a website about her daughter’s journey from diagnosis with Type 1 Diabetes to the discovery of hope for a healthy future.
