Homemade Low Carb Applesauce

You really can’t beat homemade applesauce.  Apples have so much flavor (and sweetness) of their own, there really is no need for all of the sugar that’s added in the store bought stuff.  This recipe adds only lemon and cinnamon for a deeper flavor.

My kids can’t seem to get enough of this right now, which is why I made a big batch and froze a lot.  It freezes and thaws beautifully!

Homemade Low Carb Applesauce

Ingredients

  • 3 to 4 lbs of peeled, cored, and quartered apples
  • 4 strips of lemon peel – use a vegetable peeler to strip 4 lengths
  • Juice of one lemon, about 3-4 Tbsp
  • 3 inches of cinnamon stick
  • 1 cup of water
  • 1/2 teaspoon of salt

Instructions

  1. Put all ingredients into a large pot. Cover. Bring to boil. Lower heat and simmer for 20-30 minutes.
  2. Remove from heat. Remove cinnamon sticks and lemon peels. Process through food mill.
  3. Ready to serve, either hot or refrigerated. Freezes easily, lasts up to one year in a cold freezer.

Yield: Makes about 2 quarts.

This applesauce is amazing. NO SUGAR and so easy. OMG….everybody must celebrate the apple hardest with this one!

How many carbs per serving does this contain? Do you know?

That depends on the variety of apple used. Ex. a medium Granny Smith has about 11.8 net carbs (with fiber from skin) while a Gala has 14.9g carbs peeled ( 12.4 net carbs with fiber from the skin). The lemon adds 3.3g of carbs, so let’s say you use the naturally sweeter Gala apples – with approx, 9 med. apples to a 3 lb bag and peel them following the recipe = 134.1g carbs for the apples + 3.3g carbs from the lemon = 137.4g carbs for the entire recipe.
