Peanut Butter Vinaigrette Salad Dressing

If you’re tired of the usual salad dressings and you like the taste of peanuts, this may be the perfect recipe for you.  The dressing is thick, creamy, and very rich so don’t overdo it.  Be sure to use natural peanut butter (100% peanuts) with no added sugar.

Peanut Butter Vinaigrette

Ingredients

  • 1/2 cup extra virgin olive oil
  • 2 Tbls balsamic vinegar
  • 2 Tbls natural peanut butter
  • Salt to taste

Instructions

  1. Combine the ingredients in a salad dressing shaker or a small jar with a tight fitting top.
  2. Shake well until all the peanut butter has dissolved and the dressing looks creamy.
