There is no better snack than a plateful of fresh vegetables and a tasty dip. Whether it’s for game day, for your kids when they come home from school, or something you pack and take with you to work – you really can’t go wrong. It’s not just perfect in the middle of the day. It’s also a great appetizer or accompaniment to a meal. It’s such a healthful thing to put on your table, and it’s an incredibly easy to prepare. Since my days have been especially hectic lately, and I haven’t had a lot of time to cook, this has been a great solution. The other night my husband picked up some sliced ham on the way back from work and I took out all of the leftover fresh vegetables from the week. I had buttermilk in the house, which makes a great base for dip. The flavor in this dip is great, but if you like a dip that’s thick you should add a little sour cream. And go easy on the garlic. A little went a very long way.
Ingredients
- 2/3 cup buttermilk
- 2 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp minced garlic
- 2 Tbsp snipped chives
- 1 Tbsp chopped fresh thyme
Instructions
- Mix all ingredients together in a small bowl and let rest for an hour before serving. Serve with cut up vegetables.
