Low Carb Bagels

Recently, Mike posted a recipe for lox and cream cheese without the bagel, which triggered a number of bagel discussions.  What is brunch, you asked us, without the bagel?  No more complaining for those of you who want to keep eating bagels.  Brunch need not be a choice between a hard boiled egg or a doughy ring of 60 grams of carb.  Maria Emmerich‘s low carb bagels are easy to make and just might be the answer to all of your brunch-n-bolus issues.  – Jessica Apple

Low Carb Bagels

Ingredients

  • 1/4 cup coconut oil or butter, melted
  • 1/4 cup coconut flour
  • 1/4 cup unflavored whey protein
  • 5 eggs
  • ½ tsp Celtic sea salt
  • 1 tsp aluminum free baking powder

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Blend together eggs, coconut oil/butter, salt, and spices if using.
  3. In a separate bowl, mix coconut and whey with baking powder.
  4. Blend the dry mixture into the wet until smooth.
  5. Grease a donut pan with coconut oil spray.
  6. Bake for 15 minutes.

Yield: 6 low carb bagels.

Carbohydrate: 2.9g

Protein per serving: 8g

Total dietary fiber: 1.7g
