Baked apples are a fall favorite, and even if you follow a low-carb diet you get to indulge at least once a season, right? There is no sugar added in this baked apples recipe, courtesy of Ethan Adeland. The apples have so much natural sweetness you’ll never know that spoonful of brown sugar is missing.
This recipe is so simple. Just toss the oats, cinnamon, and almond butter together, put them into the apple, and set them in the oven to bake. Your kitchen will be so deliciously fragrant you’ll want to pull the baked apples out of the oven before they’re ready. But try to wait and enjoy the aroma of the cinnamon.
Ethan says that his baked apples recipe makes apples just soft enough on the outside to cut with a fork and knife, but they still maintain their apple consistency so they combine nicely with the oats. The oats will soften from the juices of the apples. The almond butter provides the right nuttiness to contrast the acidity of the apple.

Ingredients
- 2 apples (I used Fuji apples, but any good baking apple will do)
- 1/2 cup of dry rolled oats
- 2 tablespoons of almond butter
- 2 teaspoons of cinnamon
Instructions
- Preheat oven to 425°F.
- Wash apples and remove the cores. With a paring knife, firmly place an apple on the cutting board and cut out the middle of the apple in a 360 degree motion. Watch your fingers!
- In a small bowl, combine the oats, almond butter and cinnamon.
- Stuff the oats mixture into the apples and place in a baking pan.
- Bake at 425°F for 20 minutes.
- Let stand for 5 minutes.

I made these baked apples this morning for breakfast and they were so good! I added some chopped walnuts and a spoonful of dried cranberries I wanted to use up. So delicious. Would be great at any time of day. :)
