Grilled Steak with Garlic Cilantro Butter

This is a great way to use a less expensive cut of meat like chuck steak, top round or London broil.  The marinade is a little pungent thanks to the fish sauce, but it works some magic in tenderizing meat that doesn’t have a lot of fat on it.  Once it comes off the grill, top it with a pat of compound butter with herbs and spices and let it sit for a few minutes.  Then slice thinly against the grain and you have a flavorful meal to serve family and friends.

Grilled Steak with Garlic Cilantro Butter

Ingredients

    Garlic Cilantro Butter:
  • 1/4 cup butter, softened
  • 2 cloves garlic, minced
  • 2 tbsp chopped cilantro leaves
  • 1 tsp lime zest
  • 1/2 tsp salt
  • Steak:
  • 2 tbsp lime juice
  • 2 tbsp fish sauce
  • 2 cloves garlic, minced
  • 1/2 tsp ground ginger
  • 1 to 2 lb inexpensive steak
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Compound Butter:
  2. In a small bowl, mix softened butter with garlic, cilantro, lime zest and salt.
  3. Refrigerate until firm.
  4. Steak:
  5. In a large baking dish, combine the lime juice, fish sauce, garlic and ginger. Add steak and turn a few times to coat well.
  6. With a fork, poke steak all over both sides to allow marinade to seep in. Let chill at least 1 hour, turning once or twice to coat.
  7. Preheat grill (or broiler). Remove steak from marinade and sprinkle both sides with salt and pepper.
  8. Grill 5 to 7 minutes per side, until desired doneness is reached (130F for medium rare). This will depend on the thickness of your steak.
  9. Remove, top with 1 tbsp of the compound butter and let sit 5 minutes.
  10. Slice steak thinly against the grain.
  11. Top each serving with a little more compound butter and serve.
