You really can’t go wrong with acorn squash since it’s naturally sweet and delicious.  We’ve seen so many acorn squash recipes that call for the addition of brown sugar or maple syrup, but we’ve tried it without, and it doesn’t need any added sweeteners to enhance its flavor.  Our recipe is one the simplest and healthiest ways to eat acorn squash.

Oven Roasted Acorn Squash

Ingredients

  • 2-3 acorn squash, quartered and seeds removed
  • 1/2 cup olive oil
  • Salt to taste (optional)

Instructions

  1. Combine the olive oil and the squash in a bowl so the squash is completely coated with oil.
  2. Place the squash in a baking dish skin side down. Preheat oven to 450 and place the squash in the oven. Bake for 30-40 minutes until the squash is brown and soft.
  3. Salt and serve.

Yield: 4-6

Carbohydrate: 25g

Notes

Acorn Squash is a good source of dietary fiber, vitamin A, vitamin B6, folate and magnesium, and a very good source of vitamin C, thiamin, potassium and manganese.

i so totally agree Melantha,  I kept looking but was about to give up..i didnt want all that brown surgar, maple syryp, honey..yuck yuck yuck..
