Have you ever noticed how a little salt can bring out the flavor of dark chocolate? It’s quite the food trend these days, and with good reason. Somehow that sprinkling of salt crystals makes the chocolate seem to connect better with your tastebuds. You don’t have to go overboard…just a little bit of flaked sea salt can do the trick.

Salted Chocolate Peanut Butter Cookies

Ingredients

  • 3/4 cup peanut flour
  • Sweetener equivalent to 1/2 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup peanut butter, melted
  • 1/4 cup butter, melted
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/4 cup salted peanuts, coarsely chopped
  • 4 ounces dark sugar-free chocolate, chopped
  • 1/2 tbsp butter
  • Flaked sea salt for sprinkling

Instructions

  1. Preheat oven to 325F and line a large baking sheet with parchment paper or a silicone liner.
  2. In a large bowl, combine peanut flour, sweetener, baking powder and salt. Stir in melted peanut butter, melted butter, egg and vanilla extract until well combined. Stir in peanuts.
  3. Roll dough into balls about 1 to 1 1/2 inches in diameter (you should get about 18) and place 2 inches apart on prepared baking sheet. Press balls down with the palm of your hand to about 1/2 inch thick.
  4. Bake 12 minutes and then remove and let cool completely.
  5. In a heatproof bowl set over a pan of barely simmering water, combine chopped chocolate and butter. Stir until melted and smooth.
  6. Dip each cookie half way into melted chocolate and let place on a parchment or waxed paper lined tray.
  7. Sprinkle each with a little flaked sea salt before chocolate sets.
