Here’s a super fun kid snack for the summer time. And it requires no special equipment like ice cream makers or popsicle molds. I made these when I had an overabundance of Greek yogurt that was approaching its due date. The kids loved the fact that there was a berry inside of each cube. You don’t have to add the chocolate coating, they are pretty great just as a yogurt snack. But chocolate turns it into dessert!
Frozen Yogurt Berry Bites
Ingredients
- 1 3/4 cups full fat Greek yogurt
- Sweetener equivalent to 1/3 cup sugar
- 1 tsp vanilla extract
- 16 fresh raspberries (or more, if your ice cube trays are smaller)
- 5 ounces sugar-free dark chocolate, chopped
- 1 tbsp butter
Instructions
- In a large bowl, whisk together the yogurt, sweetener, and vanilla until well combined. Spoon mixture into cavities of one or two ice cube trays, filling each about 3/4 full. Note: not all ice cube trays are the same size…I got 16 good-sized berry bites out of mine.
- Press one berry into the center of each and top with a little more yogurt. Freeze until completely solid, about 4 hours.
- Run the bottom of the tray under hot water briefly to un-mold bites. Turn out onto a waxed paper lined platter or baking sheet and return to freezer.
- In a heatproof bowl set over a pan of barely simmering water melt chocolate with butter, stirring until smooth. Working with one frozen cube at a time, dip into melted chocolate and set on waxed paper. (I found it easiest to stick a toothpick into the bottom of each cube and dip into the chocolate to coat the sides and the top. Then I placed up upright so that the uncoated parted was on the waxed paper.)
- Alternatively, you can simply drizzle a little chocolate over each frozen cube.
- Return to freezer until ready to eat.

*It may make more or less, depending on your ice cube trays.
