Cheeseburger Soup

When I told my kids we were having Cheeseburger Soup for dinner, they looked at me liked I’d lost my mind. I think they were envisioning ground up burger, bun and all, added to broth. They were rather relieved when I dished up this hearty, cauliflower based soup with ground beef and bacon!

Cheeseburger Soup

Ingredients

  • 1 lb cauliflower florets
  • 4 ounces cream cheese
  • 1/4 cup chopped onion
  • 2 tbsp butter
  • 2 cloves garlic, chopped
  • 3 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp red pepper flakes
  • 8 ounces shredded cheddar cheese
  • 1 lb cooked ground beef

Instructions

  1. Place the cauliflower, cream cheese, onion, butter, garlic, chicken broth, salt, pepper, and red pepper flakes in the bottom of a large slow cooker. Cook on high for 2 hours.
  2. Stir in the shredded cheddar and blend with an immersion blender until smooth. Alternatively you can transfer the soup to a regular blender or a food processor, but you will need to work in batches.
  3. Stir in the ground beef and season to taste with additional salt and pepper.
  4. Serve with fun toppings like bacon crumbles, chopped tomatoes, and dill pickles.

This was AMAZING! I made in the Instantpot following the directions of another reviewer. Cooked on high pressure for 7 minutes, then blended most of the big cauliflower chunks in my blender. I added about 2 extra ounces of cream cheese to make it creamier. This was excellent and ill be making regularly! The base of this soup would be DELICIOUS as a “keto potato soup” with ham, bacon, and a few pieces of green onion, obviously without the potatoes.

I did my florets for 2 hours and they weren’t quite tender. I just put the crockpot on for another hour. Are they supposed to be kind of crunchy or should they be tender and cooked through? thanks!

Just made this for my Keto family and it was a hit. Topped it with a bit of crispy bacon and diced tomato, and it made a delicious filling meal. Thank you for the recipe!

This soup is most delicious! Adding red pepper flakes, wakes things up. I did use pork and venison broths already in my fridge, in place of the chicken broth.

Could you make this in a pressure cooker also?

Yes! I did it in my Pressure Cooker last night and it was great! Used the saute feature to brown the meat, then removed it. Put the rest of the ingredients in, except for the cheddar. Manual 6 min. Blended (it’s really velvety). Then stirred in the cheese, the meat. And I added some baby spinach leaves. Super recipe!!
