I’m a little bit in love with walnuts. It wasn’t always like this. In fact, I’ve come full circle. In the good ole days before diabetes, I studied with my close friend, John, in various cafes. Often we’d share a brownie over coffee. And for some reason, time and again, we’d sink our teeth into a gooey chocolate brownie ready for a taste of heaven, and instead encounter a walnut. “Ewwww,” I’d say.
Now that I’ve come to terms with the fact that brownies are a thing of the past, I’m all about walnuts. I snack on them just about every day, since they’re pretty much the healthiest food around: an excellent source of protein and omega 3 fatty acids. And studies have shown that increasing the dietary intake of walnuts can improve cardiovascular health.
If you’re looking for ways to enjoy walnuts, try tossing them into a salad, add them to your morning oatmeal, or just grab a bunch and eat them straight out of your hand.
