Crunchy Mediterranean Salad

The Mediterranean Diet has been popular in recent years, and research has shown that it reduces the risk of heart disease.  This recipe is  perfect for anyone following the Mediterranean Diet, for people with diabetes, or for anyone looking for a nutritious dish that’s easy to prepare.

When I made this salad I was surprised at how delicious it was.  I had never had raw kale before (other than in smoothies) and thought it might be kind of chewy.  It wasn’t.  In fact, it was fantastic when really finely sliced.

This salad is definitely filling enough to serve as a main course but would also compliment most main dishes.

Crunchy Mediterranean Salad

Ingredients

  • 1 cucumber, chopped
  • 1 cup small broccoli florets
  • 1 cup grape tomatoes, halved
  • 1 cup finely sliced kale, tough stems removed
  • 1/2 cup finely chopped red onion
  • 1/4 cup Kalamata olives, finely chopped
  • 5 Tbsp red wine vinegar
  • 1 small garlic clove, minced
  • 1 Tbsp chopped fresh parsley
  • 1 tsp chopped fresh thyme
  • 2-3 Tbsp extra virgin olive oil
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Combine all ingredients, except olive oil, in a large bowl.
  2. Chill at least 1 hour before serving.
  3. Drizzle with olive oil and season with salt and pepper just before serving.
