Love can change your life. A job can change your life. And believe it or not, cheese can change your life.
This is cheese and crackers without the carbs! I can’t really call it a recipe, it’s more of an idea, one that really can change your low carb life. It takes no time or effort to make. And if you’re like me and you have those moments when you’re in a rush, starving, and the only quick foods in your house are carbs, this is the solution. You can also make these for more elegant events. They impress everyone.
1. Take a slice of cheese or a big spoonful of grated cheese
2. Place the cheese on a sheet of baking paper
3. Microwave (30-60 seconds, depending on the thickness of cheese and how crispy you like it)
4. Remove cheese cracker
5. Let cool for a minute (the cracker will harden as it cools)
I have made this with three kinds of cheese: Parmesan, mozzarella, and yellow cheese. I think it’s most successful with Parmesan. It takes a little trial and error to get it just right. Too long in the microwave yields burnt cheese. Not long enough and you’ve got a very gooey cracker. No matter how it turns out, it doesn’t have carbs!
*The crackers in the photo are Parmesan. The meat in the photo is corned beef. I don’t eat meat, so I have no opinion, but Mike says the two are an amazing combination.
I sprinkle flax seed fiber on a microwaveable plate prior to putting cheese on plate. It comes up pretty easy. Oatmeal is also good, just something to help keep it from sticking so bad.
These are great. I use a tbsp of shredded sharp cheddar and cook them in the oven for about 10 minutes. Probably the easiest thing in the world.
You can cut the cheese slice in narrow rows and they make a nice bunch of Dorito type pieces. Also try using garlic powder and/or onion powder before microwaving. I think the onion powder works well with American slices. Could use Lawreys or pepper flakes for a hot version. The key is the parchment paper! I microwave mine about 30 seconds or so for one slice of American cut in pieces.
I found the parchment paper and it works great. I recommend peanut butter and jelly on swiss!
Better yet: parmesan with a sprinkling of smoked paprika.

It comes in a roll box and you find it where you buy the wax paper. If you can’t find it there try the cake decorating aisle at Walmart. Thank you for this idea. I have missed having crackers with soup and chili. I will definitely give this a try.
I think baking paper is also called parchment paper. It should be available in any major supermarket.
I’ve seen this before and tried it but I can’t figure out what baking paper is. I tried wax paper and it stuck. I tried a corelle plate and that stuck too. I tried a buttered corelle plate and that was better, but mushy.
So what is baking paper and where do I find it?
