Slow Cooker Pepper Jack Cauliflower

This creamy cauliflower dish is a cinch to make. Dump the ingredients in your crockpot and walk away for a few hours. Add the cheese, give it a stir and there you have it. A delicious low carb side dish the whole family will love.

Slow Cooker Pepper Jack Cauliflower

Ingredients

  • 1 head cauliflower, cut into 1 inch florets
  • 4 ounces cream cheese
  • 1/4 cup whipping cream
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 ounces Pepper Jack, shredded
  • 6 slices bacon, cooked crisp and crumbled

Instructions

  1. Grease the inside of a 4 to 6 quart slow cooker.
  2. Add the cauliflower, cream cheese, whipping cream, butter, salt, and pepper. Cook on low for 3 hours.
  3. Add the Pepper Jack and stir to combine. Continue to cook another 30 minutes to an hour, until cauliflower is fork tender.
  4. Add bacon crumbles and serve.

The first time I made this I used the bacon. So delicious! My husband, who is Mr. Bacon Lover, said the cauliflower is so good that the bacon isn’t necessary. So I made it yesterday without bacon. Everyone at our dinner party loved it! So omitting the bacon is definitely an option, which is great if some of your guests are vegetarian.

I just made this tonight….it is decadent, divine deliciousness!!!!!!!! This is going to be my go to cauliflower recipe. Next Christmas, this is what I will be bringing. Am I am going to use this recipe and make soup!!!! Yeah Baby!

Pour a little oil into the cooker and smear it round using a paper towel. This also works well using butter.

I really want to try this recipe. As a time saver, I will probably buy bagged cauliflower. How much is one head of cauliflower?

I made this tonight, best. Thing. Ever. YUMMMMMM!!!!! According to what I had on hand, I made a few changes in the recipe. I doubled the amount of cauliflower, added a diced, de-seeded jalapeno, added several cloves of crushed garlic, and a little sour cream that I wanted to use before it expired. I also swapped the pepper jack for Colby Jack because I didn’t have pepper jack but I compensated with more fresh ground pepper and red pepper flakes.
