Beef and Mushroom Meatloaf

This is one of my favorite ways to prepare meatloaf. The leeks add a nice, mellow onion flavor and we never go wrong with mushrooms in my home. I used fresh, homemade breadcrumbs, which keep the meatloaf very moist.

Lemon and Rosemary Chicken

This dish is so incredibly easy to make and it's absolutely delicious! Surprisingly, even with the large amount of rosemary in the dish, it isn’t overpowering at all. It balances perfectly with the olive oil and garlic.

Swiss Chard, Onion and Cheese Frittata

This frittata is full of flavor and incredibly healthy, since Swiss chard is a nutrient dense vegetable that is rich in dietary fiber. I think it's a perfect dish for a weekend brunch, but could easily work for dinner, too.
