ASweetLife’s eight year anniversary was back in October, but it’s been such a busy year we didn’t have a moment to celebrate (and barely even noted the occasion). So, now as the year comes to a close I’d like to say OMG – eight incredible years!  Mike and I came into this with high hopes of contributing to the diabetes community. We had no idea how much you all would contribute to us, and how much we’d learn from you.

We sometimes laugh about the fact that when we started this magazine in 2009, we had worries that we wouldn’t be able to roll out enough content to sustain it. Turns out, there is so much to write about life with diabetes we can’t come even close to covering it all with our small team. But, we’re proud of what we’ve done and honored that we’ve had the opportunity to work with so many kind, smart and talented contributors.

So, here’s a toast to all of us: may we enjoy a year of good health and happiness, full of sweetness. Sometimes it pays to play with your food. Carolyn invented this low carb chocolate ricotta pudding recipe when she had nothing for dessert and needed a quick treat. She first tried it with just ricotta, cream cheese, sweetener, and vanilla extract but was underwhelmed. Then she added a little cocoa powder and some instant coffee and voila! It was like instant chocolate pudding.

This delicious low carb Cranberry Orange cookie is easy and perfect for sharing. You can freeze the dough ahead of time so it’s ready whenever you need it. 

Unsweetened dried cranberries are tough to find but some places do carry the freeze dried kind, which work well for this. Trader Joe’s and Amazon are good places to get them. You can also make your own using the recipe found here.

But if you really can’t find them and don’t want to make your own, sub in 1/2 cup of finely chopped fresh cranberries. Whether they are fresh or dried, chopping the cranberries is important to being able to slice the shortbread more easily!
